Do you have TJ's recent book? 5 Qh5 Be6!? looks very difficult.

But what happens if White goes back to original plan of 5 Bc4 - ? Anyone know if Schlemmer had anything prepared for this?

OK. I wasn't fussed about avoiding this line but more interested in the position resulting. Indeed, white could play 2. Sf3 or 1 .d4

Thomas Johansson did in his Fascinating King's Gambit. A short quote:

"Those, who don't like the consequences of 3.Nf3 d5!? or those who don't want to be troubled with that mess (which includes myself), should prefer 3.Nc3!"

I wholeheartedly agree.
