I'd also go to the open game (1...e5). Several strong players have said that it's one of the most instructive defenses to learn. I guess by that they mean you learn more about how to play commonly occurring chess positions or something like that. It could well be true that it's objectively a slightly stronger move, which I don't mind playing either. Grin I once asked a GM something to the effect of "Aren't there a lot of lines to learn?" And he replied, "Yes, but once you know them, you know them." I guess it sounds like a practical opening to learn, and with good positions to boot. As for the question which is the better of the two defenses to play if you want to win, I'd guess that the french might be better, but it would depend on the opponent as well; e.g. if he were an exchange french specialist you might want to play 1...e5. From French defense to the Open Game (1...e5) is a switch I made several years ago.  Lately I've dabbled with the Sveshnikov Sicilian but I still often play 1...e5 against opponents whose repertoire I'm familiar with.

Hi friends: Let's say you quit the French or just want to add something to your rep to spice a bit your chess. What defence would you choose? Short and Korchnoi went to the open spanish. Dreev and Bareev gave the Caro a chance! But tell me... what would you do?
