I'd also go to the open game (1...e5). Several strong players have said that it's one of the most instructive defenses to learn. I guess by that they mean you learn more about how to play commonly occurring chess positions or something like that. It could well be true that it's objectively a slightly stronger move, which I don't mind playing either. I once asked a GM something to the effect of "Aren't there a lot of lines to learn?" And he replied, "Yes, but once you know them, you know them." I guess it sounds like a practical opening to learn, and with good positions to boot. As for the question which is the better of the two defenses to play if you want to win, I'd guess that the french might be better, but it would depend on the opponent as well; e.g. if he were an exchange french specialist you might want to play 1...e5.
