Many players play f3 just to avoid the Grünfeld and hoping to force a KID Sämisch.
As black I would just play d5 because it is just what white does not want and the Grünfeld is quite "easy" against a f3-construction.
  

Yusupov once said that “The problem with the Dutch Defence is that later in many positions the best move would be ...f5-f7” but he is surely wrong.

I don't know much about this line, but I do know of a couple of  resources. Hope they help.

The book Black is OK Forever by GM Adorjan has 4 pages on the line starting with 3...e5 (pages 63-66).

Yelena Dembo also recommends it in her book Play the Grunfeld.
