There is not much to explain.
A sideline 7...Nc6 8.Qd2 Bd7 is the most important difference, but in the absolute majority of games after 7...Nc6 8.Qd2, Black plays 8...0-0 anyway.
Other sidelines are, generally, exotic. Or does not have much independent importance, for example if White plays 8.Bc4, 9.Bb3 and only then Qd2.

You will get an explanation in the starting out book. At GM level, I do not know if it makes a difference but at my level (+/-1900), it can be very useful to leave the king in the centre in some variations. White does then not know what he has to do (no target on the K-side) and often loses some tempi to see which plan black has in mind. And as you certainly know, time is nearly everything in the dragon...

There is of course some indenpendent black tries after Nc6 instead of 0-0 like leaving the king in the centre. However at higher levels there is no difference at all except from confusing the opponent Smiley
