With 4... Nc6 Black can still play the so-called Gurgenidze system against the Maroczy: 5.c4 Nf6 6.Nc3 d6 7.Be2 Nxd4 8.Qxd4 Bg7
You can't play this with an early Bg7 because white can play Be3 then (without fearing Ng4) and take with the bishop on d4, so 4...Nc6 just gives Black more options

(on the other hand 4...Bg7 doesn't give white the possibility of 5.Nxc6, but this isn't dangerous at all)

In Chess Openings For Black, Explained, Lev Alburt gives 1.e4 c5 2.Nf3 g6 3.d4 cxd4 4.Nxd4 Nc6 and says "As we'll see in a later chapter on the Maroczy, this is more accurate than 4...Bg7." He never explains why 4...Nc6 is more accurate though. Anyone know why it's more accurate?
