I would rather say that White finds 6.Bg5 and 6.Bc4 more attractive options than 6.Be2, than to say that White is trying to avoid the Boleslavsky, but perhaps these are two sides of the same coin.  In any event, i think the Boleslavsky deserves its reputation as a good line for Black. After 6.Be2 there is also 6...g6 with a Classical Dragon. 

Unless something's changed, 6.Be3 isn't considered a good idea because of 6..Ng4.

I've played 6.Be2 for many years and 6...e5 is certainly one of the best replies for black. I tried 7.Nb3 and 7.Nf3 but against opponents of + 2400 rating I wasn't able to get any sort of small opening advantage with white so I swapped to 6.Bg5 with better results.

Yermolinky's book (Chess explained: The classical sicilian) covers well the Bolevlasky. At least is a (very) good starting point. These Be2 lines are no longer fashionable but still there a lot of chess there. It wouldn't be my first choice vs. classical but is a hightly respectable one.
