For what it's worth, Chessable released a French repertoire course back in May where IM Yuriy Krykun recommends 3...Be7 against the Tarrasch, and also against 3.Nc3.

The pre-order announcement for the upcoming ChessBase Magazine #207 on the Chess4Less website shows that there's coverage of 3...Be7 in the French Tarrasch.

I'm rather late to the party, but I did want to mention that 3..Be7 is covered in The Modern French by Antic and Maksimovic, and in the third edition of Watson's Play the French.  Admittedly these two works are quite old.  For a more recent treatment, see chapter 12 in The Fully-Fledged French by Moskalenko.

Not bad, the whole idea of making a 'half' move on move 3 as black has been quite well established for a while. Also see 3.. a6 and 3.. h6.

So you probably won't surprise people as much as a while back.

I don't think very highly of it, and most French players these days rely on 3...c5 with Qxd5 to follow at some point. Be that as it may you could take a look here at a few concrete lines in the Morozevich Variation: https://www.ichess.net/blog/veco-french-tarrasch-be7-ris/
