ShashChess is interesting - you can adjust playing style by selecting "capablanca", "petrosian" or "tal" modeled after the behavior described in the book (or let the engine decide which to apply itself).  Also some useful analysis settings to modify pruning behavior.

Tal
Attack position/algorithm

Capablanca
Strategical algorithm (for quiescent positions)

Petrosian
Defense position/algorithm (the "reversed colors" Tal)

There are some with some of the parameters you mention. Eman, Raubfisch, and Shashchess are good places to start.

I've been looking for engines which expose aspects of their evaluation functions via UCI parameters.

E.g. I'm hopeful that tweaking evaluations might incentivise an engine towards specific tasks, e.g. making it less materialistic, or making it seek out bishop pair, or maybe even sacrifice some king safety.

I don't particularly care about objective strength, I'm more keen on getting an engine to find interesting ideas, even if objectively dubious.

Are there any such engines? Most engines have a contempt setting, but I'd really like a whole load more customisability than this.
