On Modern Chess GM Sipke Ernst has a course on the Catalan with (6.) Nc3. And Unconventional Approaches in Modern Chess volume 2 by Ipatov has a paragraph on it. And on Chessable Alonso in his course on the Catalan mentions 6.Nc3 as an alternative to 6.0-0. Davies also mentions Nc3 in his book on the Catalan.

[Any suggestions on sources] covering Catalan lines fwith an early nc3, usally before castling. I have the attacking d5 book, and Marin’s Fritz trainer on Catalan versus and triangle systems is complimentary, but most of the books focus on Qc2 lines in the open Catalan and don’t cover situations where nc3 is already played.
