Yes most ...Nc6 players will play ...Nbd7-e5.
8.Nd4 Nc5 9.b4? e5! is good for Black. 9.0-0 is better. E.g.:

8.Be3 is a bit annoying too. The obvious idea being 8...Ng4 9.Bd4 and we know what kind of player White is. The other idea is 8...Ne5 9.Nxe5 dxe5 10.Qb3. The bishop can support c4-c5 or go e3-c5-a3.

That will depend on deviations like 8.Qc2 and 8.Nd4.

Against 7.d5 cant a Nc6 player try 7-,Nbd7 and "voulantarily" play Ne5 in the next move!?

7...Na6 seems a good move to me. Black gets the opportunity of going to c5 and hurting white's development. But, as previously said, I play 7.d5 only when I know my opponent likes to play his knight to c6. It is more psychological than tactical. In fact, my reasonment is: if he wants to play his knight to c6, that means he does not like to play it to a6 and so he will not feel comfortable. 
I remember a game against a 2000+ (I'm about 1800), against whom I always lost before. I really had enough of 7.Nc3-Nc6 8.d5 and so tried to play d5. The quality of his play became instantly lower and I won in about 20 moves!!  Cheesy
  

Yusupov once said that “The problem with the Dutch Defence is that later in many positions the best move would be ...f5-f7” but he is surely wrong.

8...Ne5 commits Black to a banzai king attack, but if you like that sort of thing, you could probably win some games with it.  At any rate you'll definitely scare your opponents.  There was a two-part discussion of it in NIC Yearbook about a year ago, if I remember correctly.

8...Na5 is altogether different but I believe that it's also playable.  If I recall correctly, 4 years ago or so there was a long article about it in NIC Yearbook, by Marc Tseitlin.  It's not popular, so I doubt the theory has moved much since then.  Anyway with that article and a database, you should have enough info to be able to play it.
