The problem for Black with 1.e4 c5 2.Nc3 e6 3.g3 d5 is that he gets too much equality, making him difficult to win against lower opposition in serious games. Apart from that, it's fine!

One of my blitzcompanions play the GP and my answers has been in the line of 2 ... e6 3 f4 a6. It seems to give a fully acceptable game for black, denying black his "hacking the opponent of the board"-fun the g6-lines seems to give.

5.g3 d5 6.d3 dxe4 might be even simpler and more boring. After 6...d4 7.Ne2 White might argue that he has a good version of the KID with colours reversed.

Yes. Do we also agree that the GPA does not work after 1.e4 c5 2.Nc3 Nc6 3.f4 e6 4.Nf3 a6 ?

5.g3 d5 doesnt look great for white. 6.d3 d4!? 7.Nge2 Nf6 - it doesnt look like white is 'attacking' so much in this grand prix attack anymore

I had a look at 2.Nc3 e6. In my view 3.f4 d5! and black already equalized. 3.g3 is more annoying. 3...d5 4.exd5 exd5 5.d3 is not so easy for black.

I find this hard to believe, Black has a nice centre. When I looked at this line via 3.Nge2 Nc6 4.g3 d5 5.exd5 exd5 I saw some games in which Black played a timely d5-d4 and White had absolutely nothing. Iirc there is a game Spassky-Korchnoi with this idea.

Almost 100% of my recent games against the Sicilian have started 1.e4 c5 2.Nc3 e6 3.g3 (or 3.f4) ... a6. It has been played against me so many times  lately that I wonder if this hasn't been published somewhere as a universal black system against the CS/GPA.

Indeed, it poses different problems for white. Is anyone aware of a recent recommendation that would make this line so popular?

I play 2...e6 to both 2.Nf3 and 2.Nc3. 3.f4?! (GPA) doesnt really work as well against e6 as it does Nc6  or d6 IMHO. So you're better off sticking with your other plan of 1.e4 c5 2.Nc3 e6 3.g3 as black is much less likely to be worried about 4.Bb5 after Nc6 (the reason I play 3...a6) as black expects white to place the bishop on g2 so would probably continue 3...d5.

That might be a good advise because of 1.e4 c5 2.Nc3 Nc6 (e6) 3.f4 e6 (a6) 4.Nf3 a6 (Nc6) 5.d4 (or Black will play ...d5) cxd4 6.Nxd4 Nxd4 7.Qxd4 b5.

'Fighting the Anti-Sicilians' by IM Richard Palliser provides a whole chapter's coverage solely on the 2...a6 variation. 2...e6 followed by 3...a6 tends to transpose.

You can always play 3.Nf3 and transpose to the Open Sicilian...
