Shouldnt I be able to beat 2200-players with black in blitz (my FIDE ELO is roughly 2365) ?
The best openings for blitz vary from person to person and opponent to opponent. The best blitz opening is:
a) One you are familiar with.
b) One you have some experience with.
c) One your opponent is either not familiar with or scores poorly against (there is usually a correlation between the two).
So if you are an expert in the Petroff and your opponent doesn't know the theory very well as White, go for it, to give one example. On the other hand, against another opponent something obscure such as 1...b6 could give you an advantage out of the opening against the right opponent. One thing I will stress is that the best blitz players have an exceptionally broad repertoire, in that they can play almost any opening.
If I had to recommend one opening, I'd advocate the Modern because it's fairly easy to become familiar with it, you will get a lot of experience with it very quickly because White cannot avoid it, and most of your opponents will either be unfamiliar with the nuances of the opening or score poorly against it.
