I'm tired of ones that will bury you with ridiculous tactics if you allow the position to get a certain way or don't check tons of variations, and then suddenly allow a quick sacrifice or obviously superior position.

But I would still like to use a computer for some medium to long games. They're more consistent and will force you to check every last move perfectly even if you've already won. I also like the satisfaction of outplaying a mostly tactical machine with principled play and concepts.

Then the best  programs are
1. Inert Passive Thinker 5.3B
2. Smarthink (latest is 1.2 I think)
3. Zappa Mexico II Dissident Aggressor. (Special Settings)

I would say Shredder as well. Are there any other possibilities or differing opinions from anyone that may have more experience with various engines?

I'm not an expert on the topic but I found Shredder to have a fairly human type of game.

One of my favorite programs is ChessMaster. They do have a minor programming flaw in that "defensive" players and "offensive" players are backwards. They define "defensive" players as those who defend their own pieces. So, Capablanca for instance would keep its pieces on the board while Alekhine would trade them off.

Otherwise, it's the most user-friendly chess program I've ever seen.
