Botwinnik's book about Karpov becoming world champion is something you have to look at with some care. Having read Botwinnik's books about his world championship matches I was really disappointed when I tried to read this. Short remarks and not much of verbal explanation. (I was about 1800 when reading this.)

Now I bought used versions of his German books about the Russian Opening and the English opening. They are great if you want to learn these openings.

But as this are no game collections of this player. Maybe Kasparov's books with the games of Karpov are anaother great choice. The choice isn't easy: Stohl, Karolyi, Kasparov, Karpov himself. There are disappointing books from Karpov too.

All books released under the Karpov brand - I wouldn't go as far as calling him the author only because he is mentioned on the cover - I've seen so far were mediocre at best. Or shall we say targeted at intermediate players?

I like the German version of Mednis' book. Few variations in the comments, but reasonably instructive verbal explanations, plus a detailed analysis of Karpov's playing style.

Karolyi's 2 books are excellent. This is relatively heavy stuff though. He searches for the truth.

Then Kasparov's 'My Great Predecessors' Vol. 7 should also be mentioned. It's more or less equally divided between Kortschnoj's and Karpov's oeuvre, but virtually excludes all Karpov-Kasparov clashes, as Kasparov 'reserved' them for his books dedicated to that everlasting fight. But still, in my eyes 'Strategic Wins' makes a more wertig impression (for an appropriate translation of that term, you have to dig somewhere in the october / november threads of this forum  Smiley).

Well, for depth of analysis, I am forever grateful to Jan Timman for including so many Karpov games in The Art of chess Analysis. Six of the 24 games were played by Karpov. They include:

Karpov-Spassky, 9th Match game 1974
Korchnoi-Karpov 11th Match Game 1974
Karpov-Timman Skopje 1976
Timman-Karpov Amsterdam, 1976
Korchnoi-Karpov 21st match game 1978
Karpov-Hort Waddinxveen, 1979

Timman's notes to that last game is how I learned how to play R+4 pawns vs R+3 pawns, all on the same flank. 

The two games involving Timman were both interesting draws, as was Korchnoi-Karpov 1974.  Korchnoi won the game played in 1978.

So here are some games that probably won't make it into a greatest games of Karpov anthology that certainly deserve to be studied. Timman also included two of his more impressive wins.

I like Mednis' book a lot, though it's getting old now. With every win included it becomes almost like a tournament book: No selection by the author and thus no attempt to hide the practical side of chess, games where he played badly but turned the tables, etc. in favour of "clean" or flashy wins.

I also have Endgame Virtuoso and his own 1996 collection, and the Strategic Wins volumes on order. Must admit I have yet to dig deeply enough into any of these to have an opinion...

I think every Karpov fan should also read the chapter on prophylaxis in Dvoretsky/Yusupov "Positional Play", as well as Yusupov's analysis of Karpov-Yusupov, 1983 in "Training for the Tournament Player". Fantastic stuff, really helped me understand the idea of prophylactic thinking.

Karpov also recorded some DVDs with Ron Henley of mostly 1990s games I think. I've only seen a couple of the games; instructive though more lightweight than books obviously.

Actually, there are two books with 'E. V.' in the title:
- 'Vasily Smyslov: Endgame Virtuoso', by Smyslov himself, 1997, and
- 'Endgame Virtuoso Anatoly Karpov', by Károlyi & Aplin, 2007.

I have Karpov's Best Games, and I liked it, but Karolyi's books are better.

The 'Strategic Wins' volumes, mentioned by Antillian and dfan, are definitely worth their price, Vol. 2 maybe even more so than Vol.1, if you want to start with literally 'one book'.

(To be honest, apart from them I only know 'Endgame Virtuoso', which is also a fine book, although much 'dryer', so I can't really tell if there aren't any better ones.)

I still consider Tri Matcha,  in English, printed as 1974 Candidates Matches by Botvinnik to be one of the great chess books of all time. 

I don't have any new game anthologies, but I do like Chess at the Top, 1979-1984 and Anatoly Karpov's Best Games (1996), both written by Karpov. 

But you're right, there are plenty of choices out there!

Agreed that Karolyi seems like the way to go. I don't have it myself but I've browsed through it, and if I didn't already have far more game collections than I'll ever read through, I'd pick them up myself.

PDF excerpts are available on the Quality Chess pages for volume 1 and volume 2.

I do own Mednis's How Karpov Wins, which analyzes every Karpov win from 1971-5 (the latest edition adds a smattering of games from 1976-81), whether good, bad, or ugly. The annotations are pretty light (I'm sure a 1500 could get something out of them) but are typically high-quality Mednis. Descriptive notation.
