regarding the Slav Dutch variation you can play with Nh4 instead of Qe2. In practice, though, few black players dare take the pawns since the resulting positions are vewry difficult to defend. I actually like a pretty old book by Vigorito on the mainlline Slav. It is obviously a little dated, but for the e3-lines it gives a good background. For the sharper Ne5-variations it might not be sufficient anymore.

Actually I like this one better than several of his later works (not saying they are bad).
