The move ... e6 is obviously played to develop the knight to e7. Doing this without ... h6 thrown in allows White to play the unpleasent Bh6. Black´s ... h6 prevents that and covers the black squares on the kingside.

In the Modern is there any point in being concerned with move orders at all or are we only looking to reach the Hippo set up?

Take the following example in the Modern between Couso-Akesson 2001:

1. e4 g6 2. d4 Bg7 3. Nc3 d6 4. Be3 a6 5. Qd2 Nd7 6. a4 b6 7.f3 Bb7 8.Nh3 e6 9.Be2 h6 10.Nf2 Ne7 11.0-0 Ke8

Why does black play his Hippo moves (e6, h6, Ne7) in this specific order?
