Most positional/quiet/slow Caro-Kann variation?

For White, what should I play against the Caro-Kann that is positional, strategic, quiet, slow, theory-light?

Against the Caro-Kann, there are multiple variations that are positional, strategic, quiet, slow, theory-light. But which one should I pick? Which variation is the most positional, strategic, quiet, slow, theory-light?

There's the main line 3.Nc3 dxe4 4.Nxe4 Bf5 5.Ng3 Bg6 6.h4 h6 7.Nf3 Nd7 8.h5 Bh7 9.Bd3 Bxd3 10.Qxd3. But it would get sharp, tactical and theory-heavy if Black castles Kingside or if Black plays 4...Nf6 5.Nxf6+ gxf6.

There's 3.Nc3 dxe4 4.Nxe4 Bf5 5.Ng3 Bg6 6.Nf3 Nd7 7.Bd3. But this might be a bit too dry and drawish to play this as my only weapon, so perhaps I should play this half of the time and play the main line the other half of the time?
